Taking only 8 minutes to cook this dish is going to be your new family favorite.
Sole is a common market name used for several species of flounder landed in Massachusetts. Whether you are buying grey sole (witch flounder) , lemon sole (blackback flounder), yellowtail sole (yellowtail flounder), or fluke (summer flounder), these locally-caught flatfish are all actively managed and harvested at a sustainable level.
@massmarinefisheries @OnTheWaterMedia and fourth-generation fish monger Laura Foley Ramsden @SisterFlounder are providing recipes all summer long.

Here’s a restaurant quality soul recipe that you can easily make at home. Parmesan encrusted soul. First, we’re starting with the crust. Panko with a little more parmesan than you might imagine. Stir that up. Season your fish with salt and pepper. Our seasoned sole is going to go in the melted butter and then into the crust to the sheetpan. And then drizzle a little extra butter on top. Straight into the oven, 450° for 8 minutes. Oh, they look so beautiful. Got a quick and easy dish. We have a perfect family meal. I like to add a little parsley for color and flavor and then enhance with a little of our fresh broccoli for really a complete meal. We are so lucky to have soul harvested locally. Ask your server or retailer for the local catch.
