Bid o Maticha (also spelled Bid w Matisha) literally means “eggs and tomatoes” in Moroccan Arabic. It’s a beloved staple of Moroccan home cooking – found on lunch and dinner tables across the country and offering comfort and nourishment. In fact, there’s hardly a Moroccan who hasn’t tasted this dish at least once ! 🇲🇦🥘

The recipe uses just a handful of ingredients: ripe tomatoes, eggs, olive oil, and a few spices. We start by sautéing grated tomatoes with garlic and traditional spices like cumin, paprika, and black pepper to create a savory tomato sauce. Then we crack the eggs into the simmering sauce and let them poach until just set. The result is tender eggs nestled in a flavorful, tangy tomato base. (It’s similar to shakshuka, but this Moroccan version is simpler – just tomatoes and eggs without the usual bell peppers) The aromas of garlic and cumin will fill your kitchen as it cooks, letting you know you’re about to enjoy something truly delicious! 😋

This dish is also perfect when you’re short on time or money – its basic components (eggs and tomatoes) are inexpensive and cook in minutes.
Many families in Morocco whip it up as a quick lunch or dinner as a light snack. It’s typically served straight from the pan with some fresh bread (Moroccan khobz) to scoop up the sauce, and often accompanied by a cup of sweet mint tea for a complete Moroccan experience.

[Music] Today we’re making elo matesa. It’s a It’s a classic Moroccan dish. Eggs and tomatoes. whenever you don’t have the time, you don’t have the money, or you don’t have the energy of listening to five to six people all asking for different things for dinner. So, that’s what they end up getting because this is easy, it’s quick, it’s delicious, and this is cheap, and it’s a classic. First thing I’m going to do is I’m going to take three medium tomatoes, and I’m just going to chop them in half. I’m just going to get rid of this [Music] If you can try to get a good quality tomatoes, tomatoes that are a bit ripe. Next thing, grate them. [Music] Next thing to do is crush in two garlic cloves. [Music] I’m just going to mix everything in. Next is 1 tbspoon of tomato paste. Also, try to get a good brand. Mix in the tomato paste. Tajine on medium heat. And we’re just going to let it simmer until we get a nice thick tomato sauce. My sauce has reduced for the last 15 to 20 minutes. It still has to reduce further. But now I’m going to add olive oil, spices, and herbs. I’ll start with a generous amount of olive oil, 2 to 3 tablespoons. [Music] I’m going to add half a teaspoon of salt. I’m going with a heaped half a teaspoon of cumin. Also, a heaped half a teaspoon of smoked paprika. And just 1/4 of a teaspoon of black pepper. Mix in my spices. It’s starting to smell good already. Now I’m going to add almost a tablespoon of mixed parsley and cilantro. And again, mix it in. I’m going to reduce it a little bit longer until you clearly see that there’s no more liquid. It’s getting very thick. Then we’re going to add the eggs. If you find yourself just watching this sauce bubble without doing anything, please feel free to subscribe. I’m just going to make small spaces here where I’m going to put my eggs. [Music] take my fork and let’s just gently spread out the egg yolk. So, I’m going to reduce the heat just a little bit and I will let the eggs cook very slowly. I want them to get creamy. Not too hard, not too soft, just nice and creamy. [Music] And to finish your tajine, just a little sprinkle of parsley and cilantro. And for me, just a touch of salt. When you add the eggs, the sauce just get a little bit sweeter. So just the touch of salt is the perfect finish. [Music] Thanks for watching till the end.
