Had some chicken thighs I needed to cook and some time this afternoon so I decided to cook some shawarma. First time doing it this way and I’d say it turned out pretty well!

I will say I am a very VERY seasoned shawarma man. I shawarma fuckin HARD.
If you have a flat top it’s also great because you can throw lamb fat on their and cook the chicken in the lamb fat. Alternatively if you’re going vertical you can also put lamb fat on the top and it’ll drip down. The rotating vertical grills are also really good and very inexpensive. They also do the joetissery which lifts the large egg and I’ve had great results with that as well, but you need to go horizontal. So many different ways of doing it

For this dob you just use the shawarma spit and indirect heat?
I’ve never made shawarma because I thought it needed specialized tools…
