Chef Josh Boutwood has officially opened Osteria, a limited-time Italian pop-up at The Balmori Suites in Makati City.

Running until September 28, Osteria highlights Boutwood’s personal take on Italian cuisine, recreating traditional dishes with a creative spin on flavors.

The menu draws inspiration from Italy’s humble and cozy osterias, which are casual eateries known for comforting meals in a relaxing atmosphere.

“Italian food is authentic and heartfelt. I want to build on that in a more nuanced experience,” Boutwood said during the media launch of Osteria.

“The flavors are alive, bright and lively, without taking away from each ingredient,” he added.

Diners can expect handmade pastas like tortelloni, bucatini, rigatoni, and lasagna, paired with tomato or dairy-based sauces and select proteins and seafood.

Standout dishes include fritto misto with roasted garlic and anchovy emulsion, zucchini and radicchio salads with Gorgonzola and Pecorino Romano, and the 3-kg bistecca alla Fiorentina, a porterhouse steak cooked to medium-rare perfection.

For dessert, Osteria serves Italian favorites such as tiramisu and panna cotta.

The Balmori Suites is located at Hidalgo Drive in Rockwell Center, Makati City.
