Let’s make some baked zucchini fritters. I used to hate zucchini. I hated the texture. I hated the flavor. And you know, people really tend to not like a certain food because they had a bad experience with it one time or growing up when they had it, it wasn’t cooked the best. So, growing up, um, we would have microwave zucchini and no shade to anyone, especially no shade at my stepmom because she cooked dinner for us a lot. She worked. My dad worked also, but he wasn’t home every night. So, uh, you know, having zucchini that was sliced, put in a microwave safe bowl with a little bit of water and a piece of plastic wrap on top wasn’t the best flavor. The first time I had zucchini that I really liked it was when I was working behind the scenes on a Food Network show and a co-orker uh took some zucchini, sauteed it in a ton of oil and it was beautiful and browned and like at that moment I was like, “Oh yeah, zucchini can be really good.” And since then I have grown to love zucchini and I’ve tried it lots of different ways other than microwave steam and zucchini bread. And one of the recipes that I love is these are these baked zucchini fritters. They’re super easy. And I mean, like, what’s not to love? There’s cheese and parsley and garlic and shallots and a little lemon zest. I mean, yum. Plus, it comes with a dipping sauce that I’m making right now. So, sauce, dipping sauce. Love it. These are great for a party appetizer or if you want to bring something to a little get together. They come together in about 30 minutes, but they’re super delicious.
