Sourdough eggs and pancetta sandwich

With a new batch of sourdough buns comes a new sandwich.

Featuring grilled onions, scrambled eggs, roasted pancetta, cream cheese and a bit of Dijon mustard (optional).

Buns (2nd and 4th picture) are made with the following ingredients:

• all purpose wheat flour, 70%
• whole spelt, 30%
• water, 70%
• butter, 15%
• grated pecorino cheese, 15%
• roasted and milled black pepper corns, 4%
• salt, 2%
• sourdough starter/levain, 20%
• sesame seeds for sprinkling

The buns are really complex in flavor. The entire sandwich was just an explosion of textures and aromas. Truly delicious!👌🥪
