Do you ever promise yourself you’ll snack healthier and then 5 weeks later you find three squish bananas at the bottom of your bag? Yeah, same. The good news is they’re the perfect excuse to make banana bread. Preheat your oven to 190°. I don’t know what that is in Fahrenheit. I’m sorry. And then also line a tin. Then you just need to mash these bananas in this bowl. Personally, I’m a green banana eater and I know that’s going to cause a lot of controversy, but I don’t like them when they’re this yellow. Now that it looks like something a toddler would do to a banana, you’re going to add your eggs. Three of them. Medium sized. Holy cow. I didn’t know my parents won the lottery recently, but I only need three of these. You’re just going to whisk these in with a fork. I use vegetable oil in my bread because if I use butter, it goes stale really fast. And if you use vegetable oil, it doesn’t solidify at room temperature. Is that too sciency? Probably. 175 g of this. I forgot to switch my scale on. Just give it a stir. 75 g of light brown sugar and 75 g of castor sugar. And again, give it a stir. This is self-raising flour. You need 350 g of it. And also, don’t judge the bag. It’s broken. You also need about 1 teaspoon of baking powder. Personally, I sprinkle from the heart, but this is mixed spice and cinnamon. And again, mix in with a fork. Now, you just need to pour it into the line tin. Pop this into your preheated oven for about 40 minutes. She’s a little bit warm still, but I’m going to cut into her. And there she is. And she will stay moist for like 5 days. And you can freeze her as well. 10 out of 10.

  2. Side note: as a greenish banana eater myself, I just don't understand how people enjoy eating too ripe bananas, I can't with the mushy texture 🤮. Buuuut yes they are perfect for things like smoothies and banana bread!

  6. As someone living in a high humidity state, fresh fruit lasts like maybe 4 days before it's rotten, unless it's in a humidity controlled fridge…and then it lasts like 1 extra day. I've learned to buy fresh things in much smaller quantities otherwise I'd be making a ton of banana bread and apple cider. Still! Great recipe to have because I will inevitably need it lol

  8. I too, am a green banana eater! Not horribly green, just green enough! Ripe bananas taste like they're fermented to me, like they're starting to go bad already. It's been that way my entire life! It's lovely & rare to find another who shares my preference for green bananas! 😊

  9. Is there a reason you're using both self raising flour and adding additional baking powder? I thought self raising flour already had the ideal amount of baking powder mixed in for the ratio. No hassle
