Hi everyone! Today we’re making a classic Italian dish: pasta and chickpeas. Simple, nutritious, and incredibly delicious!

Ingredients for 4 servings:

500 g canned chickpeas
200 g short pasta
2-3 tbsp of oil
2 garlic clove
1 onion
40 g tomato sauce
Salt to taste
Pepper to taste
Half a bouillon cube (vegetable or chicken)
Vegetable broth (or i use hot water), about 1 liter
Instructions:

1️⃣ If using dried chickpeas: soak them in water for 12 hours, then boil for about 1 hour until tender. If using canned chickpeas, drain and rinse them well.

2️⃣ In a large pot, heat the oil with the whole garlic cloves and the onion. Let them sauté gently to infuse the oil with flavor.

3️⃣ Add the cooked chickpeas, stir, and let them sauté for a few minutes. Then, add the tomato sauce, and cook for another 5 minutes.

4️⃣ Pour in water, bring to a boil, and let everything simmer for about 15 minutes.

5️⃣ For a creamier texture: remove half the chickpeas, blend them with a bit of broth, and return the puree to the pot.

6️⃣ Add the pasta directly into the pot and cook over medium heat, stirring frequently to prevent sticking. Add more hot broth if needed.

7️⃣ Adjust the seasoning with salt and pepper. At the end add half a bouillon cube (vegetable or chicken). Turn off the heat and let it rest for a couple of minutes.

8️⃣ Serve the pasta and chickpeas hot, drizzled with a bit of olive oil and, if you like, a sprinkle of black pepper or chili flakes.
