Crispy Harissa Salmon with fregola & yoghurt. Quick, simple and only 5 ingredients!

5 INGREDIENTS:
1 Lemon
250g Salmon fillets, cubed
200g Fregola (aka giant couscous)
Harissa Paste, 2 tbsp
Greek Yoghurt, 250g

Cupboard staples:
1/2 tsp Black Pepper
1 tsp salt
1/2 tsp Turmeric
1 tsp garlic powder
1 tsp paprika
1 tsp cumin

1.combine greek yoghurt, zest and juice of half a lemon, 1 tbsp of olive oil and 1 tsp of salt. Mix until combined and set aside.

2.Cook fregola to packet instructions and season with juice of half a lemon, 2 tbsp olive oil, salt & pepper to taste. Set aside.

3.Cut the salmon fillets into cubed chunks. Pat dry then mix with pepper, salt, turmeric, garlic powder, paprika, and cumin. Add a splash of olive oil to a pan on medium-high heat. Add salmon bites and fry for about 2 minutes on each side, removing them as soon as they’re browned.

4.Mix together harissa paste, 3 tbsp of olive oil, and a sprinkle of sugar and salt. Toss with the crispy salmon bites until coated.

5.Make a spread of yoghurt sauce, add a few spoonfuls of fregola, and top with salmon bites with extra spoonfuls of the harissa sauce. Optionally garnish with some dill!

I remember I made your mid-tier egg fried rice and it was one of the best things I made for myself so it would be convenient to have all these recipes in the same place. Anyway love the videos
