I’m clinging on to what’s left of summer with these beautiful Greekstyle kofa or meatballs. Going to start by grating a couple of potatoes and an onion. And then we’re going to squeeze out all the liquid from there. Then we’re going to add about 500 g of meat. I’m using pork and beef. Some chopped parsley, mint, olive oil, cumin, pepper, salt, cinnamon, garlic, and egg. And a bit more dried mint. And then get that all mixed together. I’m going to get some more potatoes and make some fries. Season them up and get them in the air fryer and then make a quick salad that’s going to go on the side. Then we’re going to deep fry our cuffs until they’re golden brown on both sides. Take them out, let them sit for a few minutes, and then plate up. And don’t forget to squeeze a little bit more lemon on there for freshness. And they are absolutely incredible.
