So, I’ve spent the last 15 years of my life thinking about that one scene in Ratatou. And I realized that even though this was served at a fine dining restaurant in the middle, it’s actually super easy to make at home and is the perfect end of summer dip. It’s just two parts. The base sauce, which I’m making with cream, vermouth, and cherry tomatoes, and then all the thinly sliced vegetables that you layer on top. The trick is to try and find zucchini, eggplant, and tomatoes that are all about the same diame because there’s nothing else to do while that’s roasting. I thought, why not have a drink? So, I invited one of my friends who is a top tier bartender over to make me a spritz. To be extra, you can plate it up like in the movie in a circular mold like I’m doing here. Or you can just eat it as is.

RECIPE
1. In a medium saute pan, heat 2 tbsp olive oil with 8 oz cherry tomatoes, 1/2 chopped red bell pepper over medium heat until softened. Add 2 tbsp chopped tarragon, 3 tbsp Noilly Prat Extra Dry Vermouth, and 2 tbsp heavy cream. Season with salt and pepper.
2. Blend the sauce ingredients until smooth. Pour into a medium casserole dish.
3. Thinly slice 1 Japanese eggplant, 1 squash, 1 zucchini, and 2 roma tomatoes. Shingle the vegetables over the sauce. Season with olive oil, salt, and pepper.
4. Bake for 30 minutes covered at 425F, then uncovered for 20 minutes.

It's a peasant dish, that's why it's easy. You won't actually find Ratatouille in any fine dining restaurant. That's the whole point. That's why Remy decided to cook it, because the dish is more about childhood nostalgia, the emotions held in memories are so much stronger than any old fancy dish.
That was the whole point of the scene. It's considered a peasant dish by many but managed to deeply impress one of Paris's most highly appraised critics.
Reminder that what Remy made is technically not traditional ratatouille. Ratatouille is a vegetable stew, not as pretty as what's made here, which is confit byaldi

Inviting a "friend" over just to make you a spritz sounds like a user. However inviting a friend over for dinner that you cooked for both of you while they prepare drinks for you both sounds more like a healthy, level headed friendship.
