Ingredients
Coffee granita
-1 cup espresso
-¼ cup sugar
-4oz Baileys original Irish cream

Baileys whipped cream
-1 cup heavy cream
-2oz Baileys original Irish cream
-1 heaping tbsp confectioner’s sugar

Method
1. Place the espresso and sugar in a saucepan and bring to a simmer. Once the sugar has dissolved, take the saucepan off the heat and pour into a shallow dish, tray or loaf tin to cool. Once lukewarm, transfer to the fridge to chill completely.
2. Once chilled, transfer the coffee mixture to the freezer and leave for 1 hour. After an hour, remove from the freezer and break up the ice using a fork. Start from the edge and work your way into the center.
3. Place the mixture back into the freezer. Repeat previous step every 30 minutes. After 3 hours the mixture should be well frozen, so start whipping your cream.
4. Pour all the ingredients into a large bowl and whip the cream using a whisk until soft peaks form. Make sure the cream is well chilled before whipping.
5. To serve, scrape the granita one last time and place equally in 2 clear glasses. Pour 2 ounces of Baileys original Irish cream in each glass, top with the whipped cream and enjoy!
