Recipe:

Chicken:
2 pounds chicken thighs, boneless and skinless
3 Tbsp avocado oil
1 lemon, juiced
2 tsp honey
4 Tbsp harissa
5 garlic cloves, minced
1 tsp paprika
2 tsp coriander
2 tsp cumin
2 tsp salt
1/2 tsp pepper
1 tsp dried parsley
2 Tbsp fresh parsley, chopped
-Add all ingredients, except fresh parsley, to a large bowl. Mix to combine. Add chicken, coating all sides. Cover, set aside, and let marinate for 15-20 minutes.
-Add 1 Tbsp of avocado oil to a skillet over medium-high heat. Add chicken and cook for 3-4 minutes. Flip and cook for an additional 2-3 minutes or until internal temperature reaches 165°F. Remove and cut into cubes. Add chicken to a bowl and toss in fresh parsley.

Sweet and spicy tahini sauce:
1/4 cup tahini paste
1 Tbsp maple syrup
1 Tbsp sriracha
1 lemon, juiced
1/2 tsp garlic powder
2 tsp soy sauce
2 Tbsp water
-Add all ingredients to a bowl and mix until fully incorporated. If needed, add more water in small amounts to reach desired sauce consistency.

Broccoli and sweet potato:
2 heads of broccoli cut into florets
1 large sweet potato, peeled and chopped
4 Tbsp avocado oil
1 tsp garlic powder
1 tsp onion powder
1/4 tsp dried thyme
1/2 tsp dried rosemary
1 tsp paprika
1 1/2 tsp kosher salt
1/2 tsp pepper
-Add all ingredients to a bowl and mix until vegetables are fully coated. Add to a baking sheet and bake at 425°F for 25-35 minutes, flipping vegetables halfway through. Enjoy!

  5. Is the broccoli not a bit too soft? I think it needs less time to cook than the sweet potatoes. Either way, the meal looks amazing!
