My Italian grandmother always made it with love, layering simple, fresh ingredients that made every bite unforgettable. Now, we’re sharing it with you so you can bring the same comfort and joy to your table. To make this recipe, combine 3/4 cup of breadrumbs in a shallow bowl, 1/4 cup of grated Parmesan cheese, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of dried basil, 1 teaspoon of dried oregano, 1/4 teaspoon of smoked paprika, and then thoroughly mix these ingredients. From there, beat an egg in a separate shallow bowl. Then, slice two boneless, skinless chicken breasts in half lengthwise into cutlets. Then, pat them dry and season with salt and pepper on both sides. You’ll need 1/4 teaspoon of salt and 1/4 teaspoon of pepper. Dip each seasoned cutlet into the egg mixture, letting excess drip off. Then press it into the breadcrumb mixture, coating both sides thoroughly. Place the coated cutlets on a prepared baking sheet. For extra crispiness, lightly spray the tops with olive oil spray. Then bake at 425Β° F for 18 to 22 minutes or until golden brown and fully cooked. When the internal temperature reaches 165Β° F, remove from the oven. Then spoon on 1/2 cup of marinara sauce and 1/2 cup of shredded light mozzarella cheese. Also add four fresh basil leaves or top with fresh chopped basil before serving.
