Inspired by others earlier in the week: roasted tomato soup and grilled cheese

The soup was pretty acidic, so lessons learned were:
Choose my own tomatoes at the store and don’t trust a shopper to do that
and
Roast them longer next time for more caramelization.
The recipe I was working from was a good foundation, but I just need to tweak it a little. Next time I try it I’ll roast the onion and garlic along with the tomatoes instead of sauteeing in the soup pot. I think I’ll also run it through a sieve after blending to remove seeds. I’m not a wimp about seeds but I think the texture would be nicer without them.

This looks great! To help with acidity you can try adding just a little but of baking soda. It is basic and will help to neutralize the acid from the tomatoes!
