When Matt and the kids are away, I will make….something? This isn’t what I envisioned but when I tell you it smelled SO good I just knew this was a winner! #meatballstroganoff #onepandinner #quickandeasyfixes #kidfriendlydinner #30minutedinnerideas

My husband has the kids down the street playing whiffle ball with the neighbor kids and I’m making one pan meatball stroganov. Let’s do this. I love chopping as much as the next girl, which means I don’t love it. I hate it actually. But I have this onion in my fridge and I need to use it up. So, we are going to start by chopping up one onion. This. Do I have noodles? I might not have noodles. I have some noodles which are not the noodles I was going for. We’re going to use dillini. It’ll be fine. A half a stick. Don’t worry, it’s a one pan meal situation. It’ll come together eventually. Onions going in. A metric ton of garlic going in. Turn your heat down. Everything does not need to be cooked on high heat. Season as you go. Salt and pepper every layer of your dish. It will not wind up too salty or too peppery. If you’re careful, use your eyeballs. If you think that it’s too much, then don’t add more. This is what they should be looking like. I am going to add some frozen meatballs. Honestly, add as much as you like. I don’t really care. Some time has elapsed. My meatballs could be browner. I don’t care. I’m not waiting any longer. Jesus [ __ ] Christ. About a half a pound. And I’m going to let that toast in the butter in the pan with the onions and the garlic and the meatball. I’m just going to stir it occasionally as often as I feel necessary. My dillini is toasting and I don’t feel like doing this any longer. And I have a partial box of beef broth. I’m going to dump it in. I also have two cups of water. That looks good. I don’t know where the lid that goes to this pan is, but maybe this one will fit. Nope. I think this is too small. Yeah, that one doesn’t fit. My mom will tell you this isn’t her fault, but I beg to differ. Pop a lid on this [ __ ] and let it cook for I don’t know how long. 10 minutes, 8 minutes, 7 minutes till it’s done. While that is cooking, we are going to make what is going to make it creamy and stroganoff e sour cream. About a packet worth of brown gravy mix. And then some water. Maybe a cup, maybe a half a cup. I don’t know that much. Stir it around until everything is well combined. The reason we add water is so that we don’t end up with little clumps of gravy or sour cream. Things are happening inside of this pot. Remove the lid. There is basically no more liquid left. All of our noodles have absorbed all of the liquid. Add in your gravy mix. Add a half a cup more water. I cannot explain to you how delicious this smells. It smells like Thanksgiving for some reason. And I don’t know why. This is what it should be looking like. And here you have it. One pan meatball stroganoff. And I know what you’re thinking. Is it even good? And I’m thinking the same thing because I’ve never made this before. Let’s give it a taste. This is so good. Make this [ __ ] But of course it’s good. I made it.
