When the dinner location changes and you want to keep the cook going.
I sacrificed an old cooler and used my solar generator to keep the cook going for the hour drive. Should have scarified the cooler before, makes it much more efficient, plus the cooler is nearly watertight so it traveled well.

Just the excuse I needed to get one of those fat charger stations!

Before cheap circulators were available, we used to sous vide low tech style by putting a thermometer in a cooler, and topping if off with boiling water every half hour or so. Once the protein has been brought up to temp, it stays pretty stable in a good cooler.
