Let me show you how to make easy, protein packed and delicious Greek lentil salad. Whisk up extra virgin olive oil, red wine vinegar, dijon mustard, honey, oregano, salt and pepper. Drain and rinse the lentils. Shake the water off and let them marinate in the dressing. While they soak, chop cucumber, tomatoes, onion, olives, bell pepper, and crumble in some feta. Toss it all together. Easy, right?

  2. I have been making the veggie couscous salad on repeat. I’ve added many more vegetables and I add a dollop of homemade tzatziki on top. It is beyond delicious. I also found couscous with flavoring packs and that adds so much!

  3. Great meal. For those of us who don't eat oil or cheese, i used some aquafaba in place of oil, and nothing in place of the cheese, but I can see some scrambled tofu mixed in might be good. Yum!
