At Trader Joe’s, we embrace the culinary seasons and seasonings from around the world, with summertime being no exception. In that spirit, we invite you to this unique cookout with Grilled Pineapple & Prosciutto-Stuffed Pork Chops, featuring Trader Joe’s Soyaki!

As a jumping off point, we took inspiration from Hawaiian flavors—like pork and pineapple—and added a teriyaki twist. But we didn’t stop there; to really WOW with TJ’s Frenched, Bone-In, Center-Cut Pork Loin Chops, it seemed fitting to stuff them with TJ’s Prosciutto Wrapped Fresh Mozzarella Cheese sticks. The ideal plus one for a pork chop party!

Before you start, make sure to preheat the grill and marinate your meat! During the several hours of marination, the Pork’s proteins will break down, making the meat more tender and seasoned from the inside out. Don’t be afraid to char your ingredients! The grill marks will add a sweet complexity because of the sugar content in both the pineapple and the Soyaki glaze.

0:02 | Grilled Pineapple & Prosciutto-Stuffed Pork Chops
0:05 | Place 2 bone-in pork chops in a shallow dish
0:08 | Pour 1/2 cup of Soyaki over the pork chops
0:10 | Cover and refrigerate for at least 4 hours, or overnight
0:13 | Flip the pork chops halfway through
0:15 | Heat grill
0:17 | Place sliced pineapple on hot grill
0:19 | Grill pineapple 3 to 6 minutes on each side over medium-high heat…
0:22 | … or until caramelized and slightly charred
0:25 | Remove the pineapple from the grill
0:29 | Cut 2 prosciutto wrapped mozzarella sticks in half
0:32 | Chop the grilled pineapple into small pieces, and place into a bowl
0:38 | Mix 2 TBSP of Soyaki into the chopped pineapple and set aside
0:42 | Remove the pork chops from the marinade and discard any leftover Soyaki
0:45 | Cut horizontally into the side of the pork chop, making a pocket
0:49 | Make the pocket large enough to hold the filling
0:51 | Place a heaping TBSP of the chopped pineapple into each pocket
0:54 | Tuck two halves of the prosciutto cheese sticks into each pocket
0:59 | Fill the pockets with the remaining pineapple
1:03 | Grill pork chops over direct high heat for 5 minutes on each side
1:07 | Move the chops to indirect heat
1:10 | Brush each chop with Soyaki
1:15 | Cover the grill and continue to cook until the chops reach an internal temperature of 145°F
1:20 | Rest the chops for 5 to 10 minutes
