Felt like I’d ask the experts. Why wouldn’t this ice cream, labeled “maple walnut” contain any trace of maple?

It says “maple flavoured”; if it were pure maple, it would most likely say “maple ice cream”

There is concepts of maple in your ice cream.
The rosemary extract in the ingredient list is peculiar! If I had to guess the maple is prob under the “flavors” ingredients but it would do them a lot of favors to just list maple separately.

Probably because maple is relatively expensive as a bulk ingredient and it’s less expensive to use the natural/artificial flavoring instead.
Edit to add I just noticed it’s maple flavored ice cream and not maple ice cream. I assume that has something to do with it as well.

There doesn’t appear to be cream in that “ice cream” either. Oh but it does have like at least 6 different kinds of emulsifiers, stabilizers, and thickeners 👌
