Newish to the BGE. Help me understand this set up. Love the direct vs indirect heat.

Set up using the eggspander system. The side with the half moon cooking grate is where you would reverse sear at 250 until the steak hits your desired temperature.
Then open up the vents to get egg up to 500+ to sear for 1.5 minutes on each side.
