My mom is Japanese and makes this easy nitsuke dish every fall at the minimum. It's now my super easy/cheat meal w/ minimal steps and maximum laziness.
Hondashi and soy sauce is just fine for the broth, and the last screenshot has the ratio I like best. You can ignore the grams, macros, and brands since most of them I randomly chose just to get calories counted.

Basically, just take a bunch of cheap mushrooms from the Asian grocery store + tofu + konnyaku (15 cal for a whole block, bro…) + and boil eggs if you want them (which didn't go into the total 583 calculation)

Cut em, wash em, throw them in a big pot with a little bit of water, and just crank the heat.

After the stuff steams down a bit since it overflows, throw in the hondashi and soy sauce to taste (or using my ratios). I do it pretty early on, sometimes even before it even boils, so that soaks into the ingredients.

I just boil it all until I remember it's even cooking, or think just look nice and soft and dark. Temp? Idk, high-medium to high.

I'll probably get 5 meals out of this pot, and tastes like home!
