


I bought a dehydrated starter from my local farmers market a few weeks ago and just made my first loaf.
I used: 50g starter, 500g unbleached all-purpose flour, 350g water, 10g salt
Mixed water and starter together. Then added flour and salt and mixed.
Let sit for 1 hour.
4 stretch and folds every 30 minutes.
Let sit on the counter over night.
Shaped and put in the fridge for ~12 hours.
Preheat oven and Dutch oven at 475°
Bake 25 minutes covered at 450° then 20 minutes uncovered at 410°
