    Two Sealed Ball Quart jars of hot pack crushed tomatoes sit on a tan countertop at eye level. You can’t see the labels, but the left one is from Tomato Weekend 2024 and the right one is from Tomato Weekend 2025.

    The one on left is “settled” and all the tomatoes are sunk at the bottom. The original 1/2” headspace looks much larger as things have all smooshed down over the past 13 months.

    The jar on the right is still full of itself and floating on its freshly canned joy. Tomato plasma pools at the bottom, chunks of red tomatoes lurk above the water line. This jar is less than 48 hours old and doesn’t know any better. It will eventually settle down.

    When our members ask, “Why are my tomatoes floating? I hot packed!” Send them here. Even hot pack can float a bit a first; fruit has air in the cell walls. Give it a few days. It will relax eventually.
