Can we make a homemade zesty Italian dressing that’s low calorie, high in fiber, but is also shelf stable? Well, I think we can. Well, if you saw my cucumber cinnamon sticks video, then you know I have some pulp that I need to use up. I want to get as much juice out of this as possible, so I’m going to strain everything first, then I’m going to run it through my juicer. It’s really not designed for this volume of material, but it proved to handle the task without any issues. We got some good quality pulp coming out of there. But is it really Italian without some tomatoes? So, I’m going to run a load of those through there also. And be sure to save your juice. That is full of vitamins and minerals. I want to smooth this out and chop up those seeds. So, I’m going to run it through my blender, but I’m also going to add a sweet onion and a few garlic cloves for some extra flavor. While that’s running, I’m going to add in some apple cider vinegar until I get my desired consistency. But to give it that authentic Italian flavor, we need to add some seasonings. And this is what I’m going with. I’m going to add these at about a 1:1 ratio plus some salt. My best advice for something like this is to start light and then do like your grandma did. Stir it up and stick your finger in it and taste it till you get that exact flavor that you’re looking for. Personally, I like to add all sour sauce to mine. We want this twangy, but we want to offset it a little bit, too. So, go ahead and throw in whatever sweetener that you desire. Give it a little stir. And mine sure looks just like some good old baby puke. [Music] It tastes good, though. It definitely took more seasoning than I thought, but this is a big pot. Now, we’re not going to add any oil to this. Oil is what makes storebought dressings so high in calories. I’m going to cook this to really infuse all the flavors together and to prepare it for canning. So, I’mma bring the mixture to a boil and then I’mma reduce my heat and let it simmer for about half hour. I’m filling pint jars, so I only need to leave 1/2 in of head space. I’ve had my jars warming in the sun and this is critical because we don’t want to put a hot liquid in a cold jar. That will cause the jar to break. Be sure you clean these rims good with some sort of damp cloth. I like to use distilled vinegar. Seals on, rings on, fingertip tight. There’s so much vinegar in these, I can safely water bath them. You want to be sure that your jaws are completely covered with water. Then I’m going to bring this to a rolling boil. I’m going to let these pint jars process for only 10 minutes. Well, 10 minutes comes quick. I’ve also let my water cool for another 10 minutes. And now I’m going to remove my jars. These will sit right here and cool overnight. Tomorrow morning, I’ll remove the rings. Be sure everything is sealed and I’ll store them in my cool room until we’re ready to use them. I find that unique recipes like this are a great way to reduce food waste and provide you with a healthier alternative than anything you’re going to find at the store. Happy canning y’all.

So I’m gonna say that fats and salad dressings like olive oil are actually really good for you. And this is a great dressing recipe. If when you crack it open to put it on your salad you’re mixing it with some kind of oil. It’s really important to get those healthy fats in to make sure that your heart is staying healthy and your gut is staying healthy. Take it from somebody who used to be extremely heavy like I could’ve been on my 600 pound life and has lost well over 300 pounds. And I’ve done that by making healthy choices and I have found that reducing calories is important but you have to reduce the calories that are causing you problems not the calories that are helping youIt’s much better to throw 100 cal at adding a tablespoon of olive oil to your salad dressing that it is to throw 100 cal at something like a banana that is just gonna spike your blood sugar. Our banana is bad, absolutely not but given the choice I’m gonna take healthy fats over healthy sugars any day.

Have you used the Ball Harvest Pro?? Essentially it's an electric saucemaker. Check them out very cool! I mostly use it to separate skin & seeds from the pulp & juice of tomatoes. Tomatillos too! The skin seeds and stuff (for both) I toss in dehydrator, which doesn't take too long, and ive made the yummiest seasonings! Makes a great gift. Folks find it hard to believe the flavor and aroma of these homemade seasonings.
