Ingredients
• 4-8 oz leftover wine-braised short ribs (or any braised meat)
• 2 slider buns
• 2 tbsp butter (1 for buns, 1 for meat)
• Splash of beef broth
• Salt & pepper to taste
• Chimichurri (comment “Chimi” for the recipe)

Caramelized Onion Mayonnaise
• ¼ cup caramelized onions
• ¼ cup mayonnaise
• 1 tbsp chopped parsley
• Salt & pepper to taste

Directions
1. Make caramelized onion mayonnaise: mix onions, mayo, parsley, salt, and pepper.
2. Toast buns in butter until golden.
3. Heat butter in pan, sear leftover short ribs, add beef broth, cover, then season.
4. Assemble: bottom bun with caramelized onion mayonnaise, beef, chimichurri, and top bun.
5. Serve with au jus for dipping.

Today we’re making chimmy cherry French dip sliders. Juicy, messy, and perfect for those leftovers. Start with chim cherry, garlic, oregano, chili flakes, salt, pepper, red wine, vinegar, olive oil. Mix it up. Then butter in the pan. Toast your buns until golden brown. GBD. Also, we’re going to add more butter to the pan. And we’re going to use our leftover wine braze beef short ribs. Sear them. Add a little splash of beef broth or beeftock. Lid on. Let the flavors come together and let the magic happen. Don’t forget to add additional salt and pepper. Now we’re going to build. We’re going to take caramelized onion mayonnaise. Put it on the bottom bun. Pile high with the wine braze beef short ribs. Drizzle with chim churi and crown it with the top bun.
