I was gifted these two nice chili plants and was told they were really spicy. I do not know what they consider spicy nor what kinda chili these are. Can’t wait to use them but am not sure when they should be picked, how big they’ll get, the type or how hot… what happens if picked too soon? Too late? Do they need to change color? Do they change color? Right now they are between 1” and 1.5” long

I think I’ve got the same ones, no idea what they are though… half of mine are red, half are greeny/black.
They look like Thai Bird’s Eye Chilies. They will turn red as the age but are fine to pick when green. Hotter than Serrano, milder than Habenero.
Cut one off and open it up so you can smell it. Even taste it with your tongue. I you do think they are ready to pick then leave a few and see if they change color.

Those might be pequins or even a macho pepper plant (trader joes sells these). They look a little short to be thai bird chilis.
Thai chilies, they’re supposed to turn red at some point. I’ve never actually grown any but I nearly bought some seeds for one before I decided on another type of pepper. I have eaten one before and they certainly are warm so don’t worry about that, if you like them hot you can stress the pepper by not watering it about three days before picking the peppers, that’s what my great grandma used to do… of course she also pickled her peppers in olive oil too so you might not want to do that.
