Moroccan pancake is just so lush!

– 270g flour
– 200g fine semolina
– 250ML lukewarm water
– A pinch of salt

Take a large bowl and put the flour, fine semolina and salt together. Add first a bit of water and knead the dough. Gradually add more water and keep kneading until it forms a compact dough. Can be a bit sticky but that’s okay. Knead it at least for 10min. Just trust the process. Now let it rest for 1 hour or more. Cover it with a towel.

Then make round balls. Not too small and not too big. Let it rest for 30min or more.

In the video I show you how to form the Msmen. Work one by one. So when the first one is in the pan (preferably a Moroccan pan), then you form the next Msmen.

I roughly get 6 pancakes out of it. If you want more, just double the measurements.
