

Frozen and then vacuum packed for enjoying on another day!
I'm new to meal prep but I've already filled my freezer as I'm currently on meal replacement and funny enough, all I can think about is food while I can't have it 🤪 What better time to stockpile some easy to grab meals for when I transition back! I'm also hoping it will help me have a healthier variety due to health and disability related limitations by giving me room to pace myself with everything food prep related.

Oh why have I never thought of making mini savory pies! I am so doing this.
Recipe wise, I combined both of these:

And reduced a little. One had too much liquid, the other had too much flour for my liking, one had spices, one had more veggies lol And I added a pinch of nutmeg while using dried instead of fresh herbs and didn’t include potatoes despite having wanted to try using chopped up pre-frozen hashbrowns after it’d cooled and was being filled as I’d read it’s a good work around for including them in frozen pies without the potatoes turning to muck.
I cooked the chicken in the sauce instead of using rotisserie chicken, but that would have been tasty and lazier (which I’m all for because these took me a couple days to complete while working around pain/fatigue). I still ended up with enough filling to make 27 mini pies, but that wasn’t happening, so I am including my approximately halved recipe for next time which I figure will be perfect for 9 (at about 4-4.5 level tablespoons per pie .. I used an overflowing meatball scoop 😅). I will just use premade pastry shells for the excess later down the road, which is also an option if you want to skip the pies all together. If you intend to cook the chicken in the sauce, add the milk/cream mixture after, unless you want to scald the crap out of your sauce 🫣 And don’t think for one second that hand mixer trick in the video is going to work for you.. I had chicken flying all over the place!
Bake time is estimate.. I looked up what other people did for frozen hand pies made with puff pastry so please watch carefully if you give these a try 🙏 I won’t be baking these up for at least a month, but I’ll update when I do.
* Frozen puff pastry (1 box, 2 sheets)
* 3 tablespoons butter
* 1/2 cup onion diced
* 2 tablespoons flour
* 1/4-1/2 tsp dried thyme
* 1/4-1/2 tsp dried rosemary
* Nutmeg to taste
* 1-1/4 cup chicken stock
* 1 large chicken breast or two small/medium
* 1/2 cup milk (or 1/2 cream, 1/2 water)
* 2/3 cup diced celery
* 2/3 cup carrots
* 1/2 cup frozen peas
* 1/4 tsp Salt or to taste
* 1/4 tsp Pepper or to taste
* 1/2 cup frozen hashbrowns, chopped (added after cooled completely and preparing crusts/ready for freezer) or use fresh potato if not freezing
Follow videos, 4-4.5 level tablespoons per pie, egg wash to seal, bake from frozen covered in tinfoil at 350 for 30 mins then egg wash before baking uncovered another 30 min. (approx.)
I make pot pies in my muffin tin and they look ok, taste yummier. My 2 year old certainly thinks so. 😋 I’m so impressed in the aesthetic of your pot pies! There so beautiful 😍
so cute! when I did pies I found wrappin them in parchment paper or wax paper helps them not break when you just want like 1-3 of em
