
The Place Located at STPI, a beautifully restored 19th-century warehouse at Robertson Quay, I visited Restaurant JAG for the first time at this space since it relocated from Duxton two years ago. JAG is a One Michelin starred Contemporary French fine dining which is known for their vegetable-centric and nourishment-led gastronomy.

The Robertson Quay space is gorgeous and exudes a very different dining ambience as compared to its previous Duxton location. I love the floor-to-ceiling windows which frame up the Singapore River. It is also a high-ceiling space furnished with custom teak pieces.


There is also a private dining room which is spacious enough for big groups or private events.

The Food While my memory of JAG was on their tasting menus, it is a nice surprise to find out that the restaurant has launched seasonal à la carte menus since late 2024 under Executive Chef Laurence’s direction.
The à la carte menus typically feature larger plates as compared to the serving in the tasting menus, with proteins taking prominence. It is also designed to complement the tasting menus, or just as a more flexible dining option for diners. Produce is sourced from Europe, Japan, and regionally or locally.

Complimentary freshly baked sourdough bread is served first. The bread goes with salted butter and herb butter, and the purplish round bread is in fact from red cabbage with a tinge of local Bak Kuk Teh spice.

I had the ala carte menu and started with their Sanchoku Wagyu Beef Tartare (from S$48) which combines with the umami of oyster sauce, soy sauce, and fragrant spring onions. To finish are toasted sesame, grain mustard, and a side of sourdough.

The Pan-seared Foie Gras & Apricot (S$48) is another starter I tried where the foie gras is paired with a unique apricot ice cream.

For mains, I was recommended the Pan-seared Sanchoku Wagyu Striploin (S$108) where the beef is tender and flavourful. The accompanying vegetables are delicious to say the least, as it is still one of the highlights at JAG.

The other mains I tried was the Pan-seared Boston Lobster (S$98) where the lobster meat texture is really good and the meat boasts a naturally sweet flavour.

You also need to save space for desserts. The Chocolate Ganache & Pistachio Ice-cream (S$25) should be a crowd’s favourite especially with the rich flavours of both chocolate and pistachio.

Alternatively, the Philibon Melon Sorbet & Nori Ice-cream (S$25) is a lighter option and the highlight for me is the unique nori (seaweed) ice cream!

Last but not least, for all diners who order a coffee or tea at the end of the meal, you also get to enjoy a series of petits fours.

Rants For the ala carte menu, prices of mains start from S$86 for the Pan-seared Seabream and each diner must order one main course. It does not work if you are planning to order a few appetisers and one main course to share for two pax.
Will I Return Again? It is great to see a fine-dining restaurant like JAG which offers some flexibility in their menu. It is a gorgeous space in a charming location in Singapore, and if you love vegetables, their dishes are paired with great vegetable produce.
