Went with prime NY strip, let it sit for about 30 minutes, seasoned with salt, pepper, and a little Omaha steak seasoning. Put on the smoker at 275 until it hit 100 internal, then put tallow down for the initial 2 min sear, then butter for the other side. Let it rest for 5ish minutes and I think it came out great 😊
