Simple Tricks to Make a FRESH and FLAVORFUL Salad Niçoise

Craving a refreshing, protein-packed, and beautifully balanced meal? This Vegan Salad Niçoise is loaded with crisp veggies, steamed potatoes, creamy chickpeas, and tangy olives — all topped with a vibrant Green Goddess dressing! It’s your go-to dish for a light lunch, wholesome dinner, or weekend meal prep.

✨ What makes it amazing?

👇 Ingredients:

1½ cups chickpeas (soaked overnight)

2 tbsp capers

¼ kg red potatoes (whole)

¼ kg green beans (trimmed)

½ small red onion, thinly sliced

⅓ cup Nicoise/Kalamata olives

8 cups chopped red leaf lettuce

1 cup cherry tomatoes (yellow/orange preferred)

2–3 tbsp fresh parsley & chopped chives

¾ cup Green Goddess Garlic Dressing

👇 Method:

Pressure cook chickpeas till soft.

Steam potatoes until fork-tender; steam green beans for 2 mins and shock in ice bath.

Mash chickpeas with capers and 2 tbsp dressing for a textured mix.

Assemble: Layer lettuce in bowls, top with green beans, potatoes, onion, tomatoes, olives & chickpea mix.

Garnish with herbs and serve dressing on the side.

[Music] Bonjour. Come on, Talibu. Today we’re going to be learning a traditional French salad which is an amazing meal replacer salad. It’s called salad niswas. And you know what is the special element in this salad? The green the green goddess dressing. Check out the recipe. Salad niswas. Let’s start with the dressing first. This is a green goddess dressing. All you need is some garlic, some fresh parsley and chives, nutritional yeast, sesame butter, some miso paste, lemon juice, water, and blend into a delicious green goddess dressing. Add in some salt, and voila, it’s ready. Look at this color. Isn’t it yummy? Now, let’s go to the salad. For the salad, you need chickpeas, which are soaked overnight and pressure cooked, of course. All you do is mash them up. Add in some capers. Add in the little bit of green goddess dressing and mix this. This forms the base of your salad. Okay. And then surround the plate with whatever you like. But we have used cherry tomatoes, onions, green beans which are steamed, steamed potatoes and in and some rocket leaves. And in the center we will put the chickpea mash. And then you can garnish it with coriander, parsley, whatever it is that you like. You could even garnish it with any herbs of your choices and some capers. And what a delicious meal replacer salad. Nikquas is ready. Bonapati. [Music]
