Started at room temp. Smoked at 180 on the Traeger til it got to 80 internal then finished over direct heat on my Weber charcoal grill.

This was my first time trying a reverse sear starting on the Traeger and though more work I may never do anything else.

And before anyone asks! The silicon spatula was strictly for serving and was not used in the grilling process
