I was craving something comforting and quick for lunch today, so I thought I’d make this creamy tomato tortillini soup. Let me show you guys how to make it. Setting a pot over medium high heat, we’re going to begin heating a tablespoon of olive oil. After about a minute, let’s dump in the four of a cup of diced onion and three minced garlic cloves. Now, we’re going to sprinkle in some oregano and thyme. Then, we can begin sautéing those for 3 minutes. After 3 minutes, let’s dump in two 10 oz cans of tomato soup along with three cups of chicken broth and 1 cup of heavy whipping cream. After pouring in our cream, let’s season with some salt and ground black pepper. Give that a mix. Then we’re going to up our heat and bring our soup to a boil. Once our soup is at a boil, we’re going to carefully add in a cup and a half of cheese torillini. Mix it in and allow our toolini to boil for four minutes. After four minutes, we’re going to lower our heat to a medium and grate in about a cup of Parmesan cheese. Once we mix in our cheese, our tomato torillini soup is ready to serve. To a bowl, let’s scoop in some of our soup. Garnish with a little extra parmesan cheese. Serve with bread. And our creamy tomato tortoillini soup is done and ready to enjoy.
