500g caputo gf bread flour
25g evoo
20g honey
100g starter
450g water

Mix everything rest in banneton until risen and bake 450 for 30 minutes in Dutch oven and 10 more with lid off

    Wait wait wait how? Been trying to make one for my celiac wife for months and it’s been gummy every time. I’m able to bake really nice gluten ones all the time.
