Cheese Stuffed Shells 🧀🍝😋 #Pasta #Cheese #Dinner

Prep: 45 min | Cook: 30 min | Cuisine: Italian

Ingredients
– 3 lbs ricotta cheese
– 3 egg yolks
– 1 bunch of chopped parsley or 1 tablespoon of dried parsley
– 1 1/2 teaspoons salt
– 1 1/2 teaspoons pepper
– 1/2 cup grated or shredded Parmesan cheese
– 1 (12 oz) box of jumbo stuffed shells
– 2 cans of tomato sauce
– Italian seasoning to taste
– 1 piping bag or Ziploc bag

Instructions

1. Preheat and Prepare Sauce
– Preheat the oven to 375°F.
– In a medium pot, combine:
– 2 cans of tomato sauce
– 1 can of water
– Italian seasoning to taste.
– Simmer over medium heat, stirring occasionally, until the sauce reaches a balanced consistency—not too thick and runny.

2. Boil Pasta
– In a large pot, bring water to a boil over high heat.
– Add the jumbo stuffed shell pasta.
– Reduce the heat slightly to medium-high (around setting 8).
– Stir occasionally to prevent sticking.
– Cook until al dente, then drain and set aside.

3. Prepare Ricotta Filling
– In a stand mixer bowl, combine:
– 15 oz whole milk ricotta cheese
– 30 oz part-skim ricotta cheese
– 3 egg yolks
– A generous handful of dried parsley (or 1 bunch chopped parsley)
– 1 1/2 teaspoons salt
– 1 1/2 teaspoons pepper
– 1/2 cup shredded Parmesan cheese.
– Mix thoroughly until smooth and fully incorporated, scraping the sides of the bowl as needed.

4. Prepare Filling Bag
– Transfer the ricotta mixture into a Ziploc bag.
– Cut a small hole in one corner to create a piping bag.

5. Layer Sauce and Fill Shells
– Stir the sauce again to ensure it’s ready, then remove it from the heat.
– Ladle a thin layer of sauce into the bottom of both a small and a large casserole dish.
– Pipe the ricotta filling into each shell and arrange them snugly in the dishes.
– Spoon the remaining sauce evenly over the top of the filled shells.

6. Bake and Finish
– Cover both dishes with foil.
– Bake for 30 minutes.
– Remove from the oven, uncover, and let sit for a few minutes to cool slightly.
– Serve warm and enjoy!

Today we’re going to be making stuff shells. And we’re going to need some for the filling. We’re going to need parmesan. We’re going to need some parmesan cheese. We’re also going to need morata. We’re going to need salt, pepper, parsley, eggs, and we’re going to need jumbo shells here. So, we’re going to get going here. We’re going to grab a pot of water here. We’re going to grab this pot with boiling water. [Music] We’re going to place this on the burner. Okay, we’re going to turn this on high and get it to boil. We’re also going to grab our cans of tomato product to make homemade sauce. So, we’ve got our tomato products here. We’re going to grab our pot here. And we’re going to grab also. Okay. So, what we’re going to do, we’re going to open up our cans. One can is crushed tomatoes. Then we’re going to add a can of tomato sauce. And then we’re going to add one full can of water. And then we’re going to add our spices. Place it on this other burner. Put it on two. And we’re gonna grab this right here to stir it. Stir our sauce right here. We just want to start to incorporate all the [Music] all the seasoning. Now, what we’re gonna do is we are going to just let it all sit here and um this is going to start boiling. This is going to simmer so all of it this flavor comes again together. And we’re going to start making our regata filling here for our for the stuffed shells here. So, let’s see. Um, Okay, we have our bowl here and it says 3 lb, which is 6 cups of aata. So, we’re going to measure that out. We’re going to use this measuring cup here. We’ll start with the small one. We have one cup here. One full cup. Now we’re going to measure it again to get another cup. [Music] This is two. [Music] This is three. This is four. This is five. [Music] [Music] there. Six. Then what it says is three egg yolks. So we’re going to take egg yolks here. one. Hey, that broke. So, let’s just redo this. Just get my hands washed. F again with some eggs. It’s two. [Music] That’s three. We got three egg yolks in there. I’m just going to clean up my mess. Oh, [Music] I’m just going to throw the stuff out. Now, we’re going to check our water here to see if it’s ready to put these noodles in. Yeah, it’s ready. So, we’re going to do is do the whole box. And what we’re going to do is we’re going to cook them for 9 minutes. Hey Siri, set a timer for 9 minutes. 9 minutes starting now. And in the meantime, we’re going to grab our normally use a pasta spoon, but we don’t want to break them, damage these noodles. Now, while those are cooking, we’ll take you back and make the filling. We got the filling here. We don’t need any more eggs. So, we’re going to put our eggs away. Okay. So, what we’re going to do is it says a bunch of chopped parsley here. Okay. So, we’re going to add I like extra for flavor. Then it says a half one and 1/2 teaspoons of salt and pepper. We got a half a teaspoon and we’re going to do that’s a half. That’s one one and a half. That’s one. That’s a half of that. That’s a half a pepper. So, let’s do the other. Let’s get this going. That’s one and a half. Okay. So, that’s that. Then it says a half a cup of grated cheese. We don’t have grated, so we’re going to just improvise and use half a cup of shredded cheese. That’s all we need. I’m going to turn down this burner. Okay. Now, what we’re going to do We’re going to mix this well. [Music] We’re going to mix this well so you can see it mixing. [Music] I’m going to scrape it. [Music] [Applause] [Music] [Applause] You can’t technically over mix this. You really can’t. So, we’re just going to mix it so it’s well mixed. [Applause] We’ll be right back. In the meantime, what we’re going to do while this thing is cooking. Hey Siri, stop timer. We’re going to preheat. And what we’re going to do right now is we’re going to take our stuffed shells, the shells alone, and take them out and drain it. I’m doing this. [Music] Okay, now we have these right here. Now what we’re going to do Leave them here to cool cuz they have to cool a while. So, we’re going to let them cool and we’ll be right back. Now, we’re going to turn this off here. And we’re going to let it just sit here because we’re not ready yet. We got to wait for this this to actually get um done and the sauce to get done. Until those are done, we will have to we’ll be waiting. Now, we’re going to get started. So, I’m going to grab my sauce here. And I’m going to wait a little on the bottom. We got our shelves here. We’ll move our sauce over to the side. We’ll put our shells here. And then what we’re going to do is take and put a regata which you can see right up here. We’re going to take this regotta Okay. So, what we’re going to do, have a spoon. We’re going to spoon the robot in this bag here. We’re going to grab our scraper here. [Music] [Music] Heat. Heat. Okay, so that’s one of them. We’re going to finish those and we’ll be right back. Okay, so I made two trays of like lasagna noodles and what we’re going to do is we’re going to freeze one and we’re going to use the other. So, we’re going to cook them both. [Applause] Going to cover them both with tin foil. Heat. Heat. I want to place These in the oven for 30 minutes. Hey Siri. Hey Siri. Set a timer for 30 minutes and we’ll be back in 30 minutes. Now, what we’re going to do is take this stuff out of the oven. Take the salt. [Music] [Music] Take the small one out.
