Last cook from a holiday in Cyprus. Lovely chunks of lamb from a chopped up shoulder. Interspersed with slices of potato. Just before the end sprinkled dried oregano and salt. I used a very old rotisserie but it certainly did the job.

    Owner of the villa we stayed in brought us some oregano he had dried in a bunch. Smell was wonderful!! About three minutes before the end of cooking I sprinkled the oregano and salt on the Souvla.

    Lamb was from a whole chopped shoulder cut into large chunks. It was really really good !! You can see the bowl of oregano on the left of the picture. Squeezed lemon on the finished Souvla.
