what you need:
2 mini cucumbers
1 cup plain Greek yogurt
Handful fresh dill
11/2 tsp honey or sugar
2 tosp lemon juice or white vinegar
Salt/pepper
2 tsp extra virgin olive oil
1/2 tsp grated garlic
11/2 – 2 cups of shredded chicken

If you’re looking for a quick, healthy, and high protein lunch to make this week, then try this taziki chicken salad. Not only is it delicious, but this batch also has about 100 g of protein in it, and I typically get three to four servings out of it. I like to make the base of the taziki first and mix that together until it’s well combined until it looks something like this. Then I’m adding in about 2 cups of shredded chicken. I grilled and then I shredded up some chicken breast, but you can also use canned or rotisserie chicken. Then just add to a container and store in the fridge for quick lunches and snacks. Since we’re using Greek yogurt, it can get watery sometimes, but a quick mix will fix that. I added this to my Mediterranean quinoa salad. This combo is so good.
