    #Cranberry Salad
    Sue Travers

    2 pk. orange jello
    1 cup boiling water
    3 cans cranberry sauce
    ⅔ cup orange juice
    ½ cup chopped celery
    ½ cup chopped apples
    Top salad with chopped pecans

    Break lettuce in bite size pieces instead of cutting. It stays crisp.

    #Kraut Salad
    1 No. 2½ can sauerkraut (4 c.)
    1 c. celery, minced
    1 med. onion, minced
    1 green pepper, minced
    1¼ c. oil
    1⅓ c. vinegar
    1¼ c. sugar

    Wash + rinse sauerkraut. Wash again. Add celery, onion, + green pepper. Mix oil vinegar + sugar together, pour over veg. mixture. Let stand overnight.

    #SHRIMP SALAD
    Dissolve and cool

    1 box lemon jello
    1 c boiling water

    Mix together and add

    ½ c mayonnaise
    ½ c cream (whip)
    1 glass pimento cheese

    Finally add

    3 boiled eggs (chop)
    1 Tbsp minced onion
    ¾ c diced celery
    1 can shrimp (rinse—drain)
    Pinch salt

    #CORNED BEEF MOLD
    Dissolve 1 Tbsp unfl gelatin in ¼ c cold water

    Then add to 1½ c hot tomato juice. Dash salt. Chill. When partially set fold in

    1 tsp lemon juice
    3 boiled eggs chopped
    12 oz can corned beef
    ½ c chopped cucumber
    2 c chopped celery
    1 Tbsp chopped onion
    1 c mayonnaise

    Chill 1½ qt mold

    #LAYERED LETTUCE SALAD
    1 c chopped celery
    ½ c chopped green pepper
    ½ c grated carrots
    ¼ c chopped onion
    1 pkg green peas (fr)
    4 hard boiled eggs
    8 slices crisp bacon
    2 c mayonnaise
    1 Tbsp sugar
    Grated cheese

    Tear lettuce in small pieces in 9×13 glass pan. Thaw peas in boiling water (do not cook). Layer vegetables over lettuce in order shown. Frost with mayonnaise and sugar mixed. Crumble on bacon and cheese. Cover and refrigerate 8-10 hours

    #Party Salad
    1 pint boiling water
    1 pkg. lime gelatin
    1 pkg. lemon gelatin
    1 no. 2 can crushed pineapple (do not drain)

    Dissolve the gelatin into the boiling water and cool. When it starts to thicken add the crushed pineapple. Let thicken a little more.

    In a separate bowl mix:

    1 pint cottage cheese
    1 can sweetened condensed milk
    1 cup salad dressing
    1 tsp. horseradish
    1 cup chopped nuts

    When gelatin has begun to set — add the remaining ingredients. Chill and cut into squares to serve

    #CUCUMBER SALAD
    1 pkg lime jello
    1½ c boiling water
    ⅓ c mayonnaise
    1 sm onion, cut fine
    1 cucumber, diced fine
    ½ green pepper, diced fine
    ½ c slivered almonds
    1 sm carton cottage cheese (sm curd)

    Add ingred when partially set

    #SOUR CREAM COLESLAW
    ##DRESSING: (chill)
    1 Tbsp vinegar
    1 tsp minced onion
    1 tsp salt
    ½ tsp sugar
    ½ c sour cream (fold in)

    Just before serving pour over chilled 3½ c shredded cabbage ⅓ c each chopped celery, green pepper & coarsely grated carrots, 1 tsp salt, 1 tbsp onion.

    #BANANA PINEAPPLE DELIGHT SALAD
    Dissolve & cool

    2 pkg lemon jello
    2 c boiling water

    Add

    2 c 7-Up
    2 c pineapple tidbits (dr)
    1 c marshmallows
    2 lg bananas. (sliced)

    Chill

    Spread topping over jello

    Sprinkle with sharp cheddar

    ##Topping.
    Cook

    ½ c sugar
    2 Tbsp cornstarch
    1 egg beaten
    1 c pineapple juice
    ½ tsp pineapple fla.

    Cool. Fold in 1 c whipped cream

    #Corn Casserole
    1. Turn oven 350
    2. Mix well in bowl 1 lb can cream style corn ⅔ cup coarse cracker crumbs 1 small can evaporated milk 1 egg ½ cup chopped green pepper 2 tbsp chopped onion 1 tsp salt ½ tsp dry mustard pinch of pepper
    3. Pour into greased 1½ qt baking dish. Bake 50 min or until firm

    #Pickled Beets and Eggs.
    1. Hard boil eggs
    2. Heat canned Pickled Beets
    3. Add hot whole peeled hard boiled eggs.
    4. Marinate in refrig several days. Serve as a relish.

    #Hungarian Cabbage in Noodles
    5 slices bacon
    1 Tbls. sugar
    1½ tsp. salt
    6 cups chopped cabbage
    4 oz. (3 cups) medium noodles
    ½ cup sour cream
    paprika

    In large skillet, cook bacon until crisp. Remove from pan, drain + crumble. Stir in sugar and salt into bacon drippings. Add cabbage and stir until it is coated.

    Cook covered — medium heat 10 minutes. Combine cabbage, noodles that have been cooked and drained, and bacon. Put in 1½ qt. casserole. Cover, bake in 325° oven 45 minutes. Uncover, spoon
    over sour cream and sprinkle with paprika.

    Bake 5 minutes more. 4-6 servings.

    #Applesauce Squash Scallop
    Diane Bridge

    1¾ cups sweetened applesauce
    1 package frozen squash (thawed)
    ¼ cup brown sugar
    ¼ t. nutmeg
    ½. salt
    2 beaten eggs
    ½ cup evaporated milk
    ¼ cup melted margarine

    Mix all ingredients and pour into 1½ quart casserole

    Top with 2 slices soft bread — cubed — fried 2 T. butter.

    Bake covered at 375° for 45 min.

    Serves 6-8

    May add slivered almonds.

    Good on Thanksgiving!

    #Three Beans Baked
    for 1 hour at 250°

    1-Can Pork and Beans
    1-Can Green Lima Beans (Drained)
    1-Can Kidney Beans (Drained)

    Mix and add —

    ¼ Cup White Sugar
    ¾ Cup Brown Sugar
    2 tablespoons Vinegar
    2 teaspoons Dry Mustard
    1 Cup Catsup
    1-lb diced Bacon (drained)
    1-onion browned
    1-lb hamburger browned (drained)

    #Lima Beans with Sour Cream
    1 lb. Lima Beans (2½ C)
    2 qts. water
    2 Tsps. salt
    ½ C. butter or margarine
    ½ C. Brown sugar, packed
    1 Tb. dry mustard
    1 Tb. molasses
    1 C Thick sour cream

    Wash beans. Place in kettle with water, Simmer 2 min. Remove from heat. Soak 1 hr. add salt. Bring to boil + simmer 1 hr. Drain.

    Place in 1½ Qt Casserole. Dot with the butter. Mix together sugar, mustard, molasses and sour cream. Mix thoroughly with beans. Bake 350° 45 min.

    Serves 8 generously.

    #Broccoli-Rice Casserole
    2 c. booked rice
    2 frozen packages chopped broccoli (cooked)

    Sauté:

    ¼ c. chopped onion
    ½ c. chopped celery
    ¼ c. margarine

    Add:

    1 can water chestnuts, chopped
    1 can cream of chicken soup
    ½ c. milk and 8 oz. jar cheese whiz (room temp.)

    Pour into greased casserole. Bake @ 350° for 35-40 minutes. Serves 8.
