Traditional Hainanese Chicken Rice
Ingredients: 1 whole chicken 4 slices of ginger 4 cloves of garlic 2 stalks of green onions 2 cups jasmine rice 4 cups chicken broth Salt, sesame oil, and soy sauce
Instructions: Poach the Chicken: In a large pot, bring water to a boil with ginger and green onions. Add the chicken and simmer for 30-40 minutes. Remove and plunge into ice water. Prepare the Rice: Sauté garlic and ginger in oil. Add rice and stir until fragrant. Cook rice in chicken broth. Make the Sauces: Blend fresh chilies, garlic, ginger, lime juice, and sugar for the chili sauce. Grate ginger and mix with salted oil for the ginger sauce. Serve: Slice the chicken and serve over rice with cucumber slices and sauces on the side.
Rice Cooker Hainanese Chicken Rice
Ingredients: 4 chicken drumsticks 2 cups jasmine rice 4 cups chicken stock 2 slices of ginger 2 cloves of garlic 2 pandan leaves (optional) Salt, sesame oil, and soy sauce
Instructions: Marinate Chicken: Rub sesame oil and salt on chicken drumsticks. Let marinate for 20 minutes. Cook Rice: Wash and drain rice. Place in rice cooker with chicken stock, ginger, garlic, and pandan leaves. Arrange chicken on top. Cook: Turn on the rice cooker and let it cook until done. Serve: Serve the chicken over rice with sauces on the side.
