

I didn’t mean to make two orzo meals back to back but oh well!
This one was pretty good! The seasoning worked well and the chicken was juicy. The only thing that I would change is it said to add 2 cups of water (if I remember, I don’t have the recipe in front of me) to the orzo but I would do less. The water didn’t totally evaporate and was a bit too juicy for my liking. So just be aware if you’re making this too.
Overall, yummy! It even tasted as good the next day for lunch.

I made this last night too. I saw the 2 cups and nearly did 1.5 thinning that was a lot. I know this was supposed to be a 1 pot, but I think the orzo should be made separate while the veggies cook on their own. Felt weird dumping water on spinach.

It was on my list, but I’m def NOT a fan of chicken thighs (and didn’t have an option to swap the protein). Looks good though – prob gonna go for it next time (if it comes around again).
agreed on the water, I did the 2 cups at first but ended up dumping a bunch out before adding the tomato paste and everything, and was happy with the result after that. very tasty!

I had good results with two cups of water personally. You want to keep the flame just high enough so it’s not boiling but there’s a good simmer to the liquid while the orzo cooks. I was very pleased with the end result!
