Chicken:
2.1kg Chicken Breast.
2 Cans Diced Tomatoes
1/4 cup Spices (I mixed Ancho Chilies, Chipotle, Chili Powder, Garlic Powder, Cumin, and Oregano)
Lots of salt.

Pressure cooked (Instapot) 40mins high. Remove chicken and shred, reduce juice to almost dry, stir back in chicken.

I weighed it after and called it 20 portions, ended up eating 1.5 “portions”

Serve as you please, I used Mr. Tortilla mini tortillas, high protein yogurt mixed with lime juice and salt, cilantro, onion, lime juice, tomato, salsa verde
