Thank you for your picture post to r/souvide. We want to remind everyone of Rule #5. Posts should be accompanied by something to foster discussion. A comment, a question, etc is encouraged.

If you’ve posted a picture of something you’ve prepared, please explain why in a comment so people can have some sort of conversation. Simply dropping a picture of food in the sub isn’t really fostering any discussion which is what we’re all aiming for.

Posts that are a picture with no discussion can and will be removed by the mods.

    Thank you!!

I need to get myself some jars…

You should do creme brulee or pot de creme next!

    6 servings, adjust accordingly.

    6 eggs
2 tbls heavy cream or half and half
    S&P to taste

Add-ins can be shredded cheese, cooked bacon, peppers, green onions, ham, mushrooms, etc.

    Set your SV to 170°.

Mix together eggs and cream, add S&P.

Spray each 4 oz jar with cooking spray.

Add your garnishes to the jars, but don’t use too many. I did cheese, bacon, and green onions.

Divide your egg mix equally among the jars.

Put on the lids, but don’t tighten them completely or the jars may burst. Tighten just enough to keep water out.

Gently place the jars into your SV container and set the timer for 55 min.

Once they start to warm up you will notice occasional bubbles coming from the jars. This is normal displacement of warmer air, not water going into the jars.

When time is up, remove to a cooling rack.

So, I’m curious about something. Have you ever done these using an instant pot, and if so, how would you compare them to this method?

I’ve only ever done the IP method and it was super simple, fwiw.

  5. Can you freeze these?

Alternatively, How long do they keep in the fridge ?

Do you freeze them? And how do you reheat them?

One of my favorites. Now I do it in my steam oven on Sous vide mode so no more jars. I do in SilPat molds.

  8. Nice job! I’ve done egg bites sous vide and they turned out delicious!! Shrimp with green onions is delicious as well

Try crème brûlée next. Perfect texture with zero effort.

I’ve been baking my egg bites but I want to try this. Thanks for the recipe!

Looks great and your recipe is very similar to the one I follow.

    * Combine 6 large eggs, 1/2c cottage cheese and salt. You can also add other spices (e.g. pepper, garlic powder) and/or grated cheese at this point. Use immersion blender.
    * Spray a bit of oil into each jar
    * If desired add a tablespoon or two of veggies and/or meat to the bottom of the jar
    * Pour egg mixture into each jar, then finger tighten
    * Cook at 172F for 1 hour
    * Refrigerate. You can eat them cold or microwave for approximately 1 minute at 30% power.
