Varies depending on your kitchen but usually

The first big pan is called a hotel pan or full pan

From there its basically fractions

After the full pan it is

  • 1/2 pans

  • 1/3 pans

  • 1/4 pans

  • 1/6 pans

  • 1/9 pans

For those new to the industry

You talking about the various sized chingaderas?

  2. Quercus408

I have an irrational aversion to quarter-pans.

Now do the word awkward ones that never fits anything and are still to short for the oven rack

  4. JustAnEmployeeHere

It bothers me that they lined 9s up long ways first.

I’m a shallow 1/4 pan guy myself.. actually all shallow pans I’m good on, for the most part… love me a shallow quarter pan

  6. But can you stack two while wet, and then get them apart during prep?

  7. N7Longhorn

Where did this guy find 3 third pans that fit perfectly how theyre supposed to

  8. Not seen here, the 2/3 pan. We have two of them at work and they’re bizarre. One is 8″ deep and the other is a 6″ steamer. No one uses them cause they don’t fit anywhere.

Great vid. I came into professional kitchen work in my late twenties and needed the chef to explain what he meant by a 9 pan.

Volumes do not change equally with size.

I get confused looks when I ask for a 1/3 pan. And the kitchen and workers have been there for years

  12. I’m not gonna say this turns me on but I can’t fully say otherwise

Why give the list hope. The hotels in the kitchen will never fit 100% correct, in any kitchen.

I remember calling them that when I first started at the place I’m currently working at and everyone looked at me like I was speaking an alien language.

My boss, the owner of the restaurant, told me that the deep third pans were third pans and the shallow ones were sixth pans bc they hold half as much as a third pan.

He also asked me why grape leaves were called grape leaves when there are no grapes in them. Just some context for what kind of fkn genius he was.

Can someone link the entire set on amazon pls

Where’d you get four quarter pans? I thought they only came in odd numbers

The last one is brutal. Those little fuckers love to tip over. That said the clear plastic ones make me feel warm & fuzzy inside. Love those shits. Just not the lids. Fuck those lids.
