Charred Tomato and Tomatillo Salsa

Smoky, vibrant, and packed with bold flavor, this charred tomato and tomatillo salsa is the one I make on repeat. It’s incredibly simple and always a hit!

As soon as tomatoes and tomatillos are in season, I make a big batch of my favorite charred salsa. And this season, we’re cooking good things with my friends at Perion’s Farms using their mild yellow onions and also adding some tomatoes, tomatillos, chilies, and garlic. I give everything a good char in a cast iron skillet. And if you have a grill, pop it on there, but on the stove top works, too. And make sure to add that dried guillo chili at the very end for a quick toast so you don’t burn it. Then it all goes in a food processor with a really good pinch of salt and a splash of water. And once it’s ready, garnish with fresh cilantro and serve it with just about anything. Tacos, chips, or straight by the spoonful.
