Hi, my name is Colette Betriga, a Theromix consultant in Australia. And today we’re making the spicy chicken with coconut rice, a TM7 fully guided recipe on cookie dough. Now, as clearly instructed, I’m popping into the bowl one onion, and I’m checking that off as I go. Three cloves of garlic, one red chili, and olive oil. Now, please take a look at the scales on the right hand side, and you’ll see how it’s measuring the correct quantity for me. Next, I’m popping the lid on as instructed, and the Theromix is going to chop all of those aromats for me beautifully. And now, it’s telling me to take the lid off and to scrape down the sides of the bowl. Now the lid’s going back on and we are going to be sautéing those aromats for about 3 minutes. And you’ll notice that green bar will be turning eventually to red, which tells me what’s in the bowl is going to be super hot. And as you can see from that steam, we have got beautifully sauteed aromats. Going on to the next checklist. I’m adding in some beautifully bruised lemongrass, some ginger, some capia lime leaves that I’m just tearing and scrunching so we can get maximum flavor out of. And now I’ve got my chicken bone in chicken thigh or leg. I’m using a much smaller quantity than the recipe is calling for. And the great thing about the Thermaix, you can alter things. You can actually resize recipes. Love that feature, especially when there’s only two of us in the house. And now I’ve added the water into the bowl. As instructed, the Thermomix is telling me now to pop the lid back on. And the great thing is when you’re cooking at speed two or below with the TM7, you can whip the lid off, just check things out, and pop it back on again. When you do that, the blades automatically stop and restart when the lid is on. So, the next stage, what it’s now telling me to do is going to cook away with the lid off, but this is our open cooking mode for 30 minutes. And it doesn’t take too long before you’ll see that bubbling away. And of course, the sauce is becoming richer as the water starts to evaporate. Now, the next instruction was to take the chicken out, pop it into a bowl, and keep it to one side. Now, the last part of this menu, we are going to be popping in there our coconut milk and our rice. So, the rice is going to take 18 minutes to cook with the lid off in open cooking mode. This means the sauce is going to reduce and the rice is just going to suck up all that amazing flavor. Yum. Now, the great thing about open cooking mode is you can check it at any time, making sure the texture and flavor is just the way you like it. Let’s take a look at the finished dish. It’s delicious. the rice on the bottom, the chicken on top, and I’ve just paired it with a fresh salad on the side. Amazing. Life’s definitely better with the Theromix, my friends.   1. This sounds delicious. I notice the original recipe also uses curry paste. Did you deliberately leave this out? Nevertheless less I’m going to try this starting in my TM 6 and transferring to a saucepan to gently cook the chicken and I will just cook the rice in the saucepan. Thank you for the idea. 😊
