It pairs golden roasted potatoes with peppery rocket, creamy chickpeas, crunchy cucumber, and red onion – all tossed in a sweet and slightly spicy harissa tahini dressing – whipped up in a re-used @Mr Organic Chickpea jar for a easy kitchen hack!

INGREDIENTS
🫙1 jar @mr_organic Chickpeas, drained
🫒 4 tbsp @mr_organic Italian Organic Extra Virgin Olive Oil
🥔500g baby new potatoes
🤌Pinch sea salt
🧅1 red onion, thinly sliced
🥒1/2 cucumber, cubed
🌿Large handful fresh rocket leaves, roughly chopped
🥄1/4 cup tahini
🥄1 tbsp harissa paste
🥄1 tbsp @mr_organic agave
🧄1 clove garlic
🍋Juice 1 lemon
🌿Handful fresh parsley & tarragon, chopped

METHOD
1.Boil potatoes for 20 minutes until fork-tender.
2. Smash onto a lined tray, drizzle with 2 tbsp olive oil, sprinkle sea salt, and roast at 180°C for 40 minutes until golden and crispy.
3. Combine onion, cucumber, rocket, and chickpeas in a bowl.
4.In the empty chickpea jar, mix tahini, harissa, agave, garlic, lemon, parsley, salt, and water to desired consistency. Shake well.
5.Add crispy potatoes to the salad.
6. Pour over dressing, top with parsley and tarragon, toss, and season to taste. Enjoy!
