Heat olive oil, sauté onion, garlic, and carrots. Add lentils, tomato, broth, salt, and pepper. Simmer till soft. Garnish with coriander and serve warm. Two, clear veggie soup. Boil water with ginger and garlic. Add chopped carrots, beans, and cabbage. Season with salt, pepper, and a dash of soy sauce. Light and comforting. Three. Tomato basil soup.
