8 oz filet from Outback. Ordered it medium rare and it came barely rare. Was actually very good though.

    Eh, like I’ll eat steak tartare so I’m not really bothered by it in that sense but I also wouldn’t be happy with this. Personally if I was cooking this fillet I would RS/SV to the warm side of rare so that fat could render a bit but even just in a pan I would still want to cook this longer. I doubt anything past the first 1/8 of an inch of that got above 100f

    That’s looks closer to blue then rare, from what I can see.

    Now I will say, I do eat blue and do enjoy it, but it’s only at one specific restaurant and that’s because the chef there seasons it to perfection, I don’t know what he does, but the seasoning is a perfect mix of sweet and spicy while still allowing the flavour of the steak through. But I also have to be in the mood for blue steak.

    I usually prefer rare myself, but not woth a a team this thick. Was it warm in the middle?

    Absolutely. Tenderloin has little or no fat to render, so no need to exceed rare. This is pretty blue though.

  23. A good rule of thumb I use for Outback is to order to a temp above what you like and they’ll usually cook it exactly how you ‘actually’ want it. They undercook their steaks on purpose so if someone sends theirs back all they have to do is throw it back on the grill for a couple minutes. I order medium and it comes out medium-rare every single time (which is how I like it). Might just be my location though.

    i am shocked outback served that to you. when i go there i order my filet : Blue rare, the rarest you will serve a steak, i have never in my entire life sent a filet back for being too rare” … and they still dont bring me a steak like that..
