I’m not sure from which region it comes from. Experimented at different temps, liked the medium the best, with the fats fully rendered.

For the salad:
Quarter Campari tomatoes.
Season heavily with salt, and lightly with (dry is acceptable) oregano, thyme, basil, parsley, and black pepper.
Give it a heavy amount of good olive oil, and squeeze fresh lemon juice over it, and let it marinate at room temperature for 15-25 minutes, long enough to draw the juice out of the tomatoes.
With your dressing (near) completed, just add in spring mix, and plate.
I personally like to drizzle good balsamic vinegar on top after I plate, I find that marinating with the balsamic can muddy the flavors that make a good balsamic so great.
